I am tiered of my videos looking like crap.
What video format should I be using?
Currently using AVI.
I also have DV and MPEG-4.
Advice?

.wmv should go like a charm.
It does because I always upload .wmv videos on youtube.
The Only downgrade is that it will make the shadows way darker. So try to be with the light.

I believe MP4 (MPEG-4) would produce the best quality.

Actually, if you transfer your video to Windows Movie Maker and then make the file more than 30MB (You can now transfer videos to Youtube with the video file being less then 1GB, but I need to check on that.) So just put your video through Window Movie Maker and save it in a huge file, 30 - 50 MB is what I use, the video would be in high quality.
